Chhole Pulao
Wash and soak basmati rice for 20 minutes. Heat oil and ghee in a pressure cooker or pan, add whole spices and sauté until aromatic. Add sliced onions and cook until golden. Stir in ginger-garlic paste, tomatoes, salt, and Rajesh Chhole Masala. Add boiled chickpeas and mix well. Add soaked rice and water, then cook until the rice is fluffy and well cooked. Garnish with fresh coriander and serve hot with raita or onion salad.
