Bhindi Fry
Wash and dry okra thoroughly, then cut into pieces. Heat oil in a pan and add sliced onions, sautéing until lightly browned. Add the okra and cook on medium heat until it becomes crisp and non-sticky. Add salt, red chilli powder, and Rajesh Sabji Masala, tossing gently to coat the bhindi evenly. Cook uncovered for a few minutes until well roasted. Finish with a squeeze of lemon juice and serve hot with roti or dal-chawal.
