Bharwa Baingan
Select small brinjals (eggplants) and slit them vertically without cutting through. Prepare a filling using onions, garlic, coriander, and Rajesh Bharva Kalaungi Masala. Stuff each brinjal with the mixture. Heat oil in a pan and cook the stuffed brinjals on low heat, turning gently, until soft and well-cooked. Serve hot with roti or rice.
