Aloo Methi

Heat oil in a pan and add cumin seeds. Add chopped onions and sauté until light golden. Add ginger-garlic paste and cook until raw smell goes away. Mix in turmeric, red chilli powder, salt, and Rajesh Kasoori Methi. Add boiled potato cubes and toss well so the spices coat evenly. Cook on low flame for a few minutes until flavors blend. Garnish with fresh coriander and serve hot with roti or paratha.
