Aloo Gobi

Heat oil in a pan and add cumin seeds. Once they crackle, add chopped onions and sauté until light golden. Stir in ginger-garlic paste and cook briefly. Add turmeric, red chilli powder, salt, and Rajesh Sabji Masala, mixing well. Add cauliflower florets and potato cubes, toss to coat evenly with spices, cover and cook on low heat until vegetables are tender. Stir occasionally to prevent sticking. Finish with fresh coriander and serve hot with roti or paratha.
